Baked Tomato with Basil & Cheese

Ingredients:

1 large tomato

3 large basil leaves

extra virgin olive oil

salt

pepper

cheese - shredded (desired amount)

butter spray

Instructions:

Slice tomato into 3 or 4 rounds, depending on the thickness desired. Salt & pepper tomato rounds and then rub sith evoo. Sprinkle cheese on top and pinch up basil (1 large leaf per tomato round) and place on top of cheese. Bake in 350 degree oven for about 15 minutes. Then turn oven to broil and let cheese brown. Let cool a few minutes.

Enjoy as a light meal or as a snack. Easy to prepare and delicious to eat.
